View of the kitchen aboard the United States Lines' passenger ship REPUBLIC, launched as SERVIAN in 1903. "With its electric ranges and cooks in their white jackets and toques, the Republic�s galley might be mistaken for a large urban restaurant kitchen. But these men worked in a moving world to serve thousands of meals, both elegant and basic, under conditions never faced in a restaurant." [Log of Mystic Seaport, Spring 2000, Volume 51, No. 4].
